Friday Feature: Budget Bytes - a great site for saving money and delicious recipes!

I know I haven't had a 'Friday Feature' in a while, but this delightful discovery was too good not to share!

We were going to have a Mexican Chicken soup for dinner this week, but last minute realized that the chicken had passed it's prime. =( It was so disappointing!

Once I found out I was "chicken-less", I scanned the fridge and saw a pound of sausage.....so I did what anyone does at 6pm......I hit Pinterest looking for a quick family friendly soup recipe -- and as usual it came through!

Tonight I came across a picture of this delicious Sausage and Kale soup and clicked over to discover it was from Budget Bytes....have you guys heard of this site??
I found Budget Bytes last week when I tried Beth's Chili-Lime Pork Loin......it was fantastic and the leftovers made a delicious stir-fry!

Recipe #2 was even better! My family *loved* this Sausage and Kale soup - it even won over my anti-soup hubby!! And at only $1.05 a serving it was a cheap, easy, delicious, filling dinner!
*I did make a couple changes, just because of what I had.....I used ground pork sausage instead of sweet, omitted celery because we were out, and I thought I had the can of white beans it called for, but did not. Not wanting to leave them out completely, I subbed a can of black beans and I can't imagine it was any worse for it!

I asked the kids how they liked it and they all said "Make it again!!".....well, all that speak anyway....Lucas just gobbled it up. My oldest daughter said it could be dinner almost every night..... = family approved. =)

Budget Bytes is going to be a go-to from now on for recipes! Oh, and besides the tastiness, she also has each recipe and each ingredient broken down by price so you know how much each meal will cost (or an idea at least since grocery prices obviously vary). And if you want to make a recipe cheaper, you can see which part of it is the most expensive and make sure you get that item on sale or sub it for something cheaper.

Jalapeno, Bacon, and Pepper Jack Stuffed Chicken Breast Recipe = Amazing!!

*Edit: I forgot to include one of the best parts about this meal! It was so cheap to make! The entire meal (including the cucumbers and cherry tomatoes on the side), only cost $3.50 for both of us!! Compare that to going out to eat at a restaurant.....it could easily cost over $20 + a tip!
What a delicious way to save money! ;)

My darling husband made us the. yummiest. dinner. last night! I went to Zumba and Rite-Aid with my sister, so got home kind of late and I thought I'd just heat up some leftovers or something....but no way....my "live-in chef" had grander plans. ;) He whipped up this stuffed chicken breast that was really creamy and flavorful.....it was so yummy, I couldn't believe the calories and carbs were so low!

We've been eating low-carb and low-fat -- focusing on lots of fresh fruits and veggies and lean meats. So far it's been going really well, and we're feeling great! We've found some yummy recipes, and come up with some healthier tweaks to the "regulars". This recipe meets our nutrition requirements (low-fat, low-carb, high protein) and is EASY and delicious!! It will definitely be on regular rotation! =)

Jalapeno, Bacon, and Pepper Jack Stuffed Chicken Breast
(Recipe makes 2 servings. Takes about 15 minutes.)

2 chicken breasts*
2 slices bacon, cooked and diced**
1/2 cup pepper jack cheese, shredded
1 jalapeno, diced
1/4 cup onion, diced
3 Tbs. olive oil
Garlic powder (to taste)
Seasoning salt (to taste)
Onion powder (to taste)

1. Butterfly chicken breast and fill with bacon, cheese (saving a small amount to add to top of chicken when finished) and jalapeno.

2. In a skillet, heat olive oil on medium heat, then add chicken. Season with garlic powder, seasoning salt, and onion powder. Flip half way through (about 5 minutes, depending on size of chicken breast). Cook until chicken is done and cheese is melty and amazing. ;)

3. Add onions to skillet after flipping. Top chicken with remaining cheese and sauteed onions. Enjoy!

Notes:
* Our chicken breasts were about 6oz. each. We could've shared, but it was so yummy and I missed a meal earlier due to a busy day.....so we didn't. ;) Next time we'll probably use a smaller breast. The nutrition facts would obviously change if you used smaller pieces of chicky.
** If you can stand turkey bacon (we are not fans, lol), that would reduce calories and fat even more.

I've been using SparkPeople.com to track my fitness and what I eat. I plugged the chicken recipe into "dinner" last night and here's the nutrition data per serving.....(columns are l-r: calories, carbs, fat, protein)

Just in case you can't see the picture:

Calories = 346
Carbs = 3
Fat = 14 (use turkey bacon/low fat cheese for less)
Protein = 49

If you try it, let us know how you like it! It's really so easy (especially when you're husband makes it ;), inexpensive, and easily customized with some variations......I'm thinking maybe spinach, bacon and mozzarella....or ham and cheddar.....or......lots of possibilities! =)

Cake Balls - an easy yummy treat! Great for New Years Eve or holiday parties!

Quiet a while ago I stumbled across Bakerella's website. I was so impressed by her cake pops and I browsed for awhile....drooling over her amazing creations. I wanted to try to make my own cake balls for a long time, but was very intimidated.....I was afraid I couldn't make them as delightful as they looked online.

Mine certainly didn't turn out as picture perfect as Bakerella's, but they were not difficult and they were yummy!! I shouldn't have waited so long! I used her directions to make Red Velvet cake balls and read some of the comments there for some tips.

I gathered my supplies......

1 Red Velvet cake mix
1 tub cream cheese frosting
chocolate almond bark

I started by making the cake mix according to the directions.

Then we cut off the edges to make sure there would be no hard bits mixed in. I think next time I might use our stoneware 9x13 because the edges don't seem to get "crusty" like in a glass pan. Emma could hardly resist eating up the "scraps"!

I used the KitchenAid to make it easy to crumble up the cake....it was weird to make a cake with the intention to break it up, but I knew it would be worth it.

Then we mixed in the tub of frosting and started rolling out the cake balls. Some people suggested only using about 2/3 of the tub, but I used the whole thing and it worked fine. Maybe try it and see what consistency you like.

Here's my great helper.....she did a much better job than I thought she would since I was worried about myself getting them all rolled nicely, lol. It didn't take as long as I thought either.

After we got them all rolled out, we popped the tray in the freezer to help the cake balls firm up and make sure they didn't crumble when we dipped them in chocolate.

After about an hour of chilling in the freezer, I dipped them in melted chocolate almond bark and let them dry on wax paper (next time I might try a cooling rack). Then I melted some white chocolate and drizzled that on top and sprinkled some red sugar while it was still wet.

We were in a hurry to pack up and drive to see family for Christmas, so I didn't get the chocolate dipping process or the "sliced open" shot so you could see how pretty the red inside the chocolate was. But they were prettier than the picture looks, lol, and really yummy....they were gobbled up fast!

The Red Velvet ones were actually my second batch, the first ones were ones that my daughter Gracie requested for her birthday. She chose a funfetti cake mix with an orange frosting (vanilla flavor - Halloween clearance) and white almond bark. The combination possibilities are endless!

I baked the cake and once cooled, broke it up into a bag and added the frosting.

Then we mushed and mushed and mushed.......

......until it all was completely mixed together. It was simple to do, but took some time.....I think I'll use the mixer again next time...unless I have some frustration to work out. ;)

Then we rolled the mix into balls and put them in the freezer.....for a while. Since it was my first attempt and I was nervous about coating with the chocolate, I left them in there for a long time.....like weeks.....maybe even months, lol. They were still good though! Which made me think this could be a great treat to have on hand in the freezer.....just waiting for company to impress!

When I finally found the courage to try it, I melted the almond bark and dipped them in it with a fork, tapped the extra off and let them dry on wax paper........here they are......

Delicious and not scary to make. ;) I was happy with how easy they are to whip up. They do take some time, but it's easy time......(like baking the cake and freezing to get firm)....
They're not difficult to make, and they are yummy and impressive. I love that both the adults and kids like them too. The only downside is that they're maybe a little too easy to eat though! ;)

The Best Chocolate Chip Cookie Recipe Ever....Seriously!

I know a lot of cookies claim to be the best, but we have tried a lot, and this one is the winner! With Christmas baking in full swing, I thought this is a perfect time to share it.

Here's the story....
My husband loves chocolate chip cookies.....he always liked the cookies I'd bake, but none were "as good as Grandma and Grandpa's". He grew up visiting Grandma and Grandpa where they had the most delicious cookies just waiting for him in the cookie jar......and whatever I made just couldn't compare with those fond memories.

Come to find out, these "magic" cookies were simply the recipe on the Nestle Toll House bag and they used half butter, half margarine. We tried recreating them, but they were just "eh". So, my quest began....I wanted to find the most delicious recipe that would really wow the hubzy.

I looked up recipes online and read ratings.....searched for "best chocolate chip cookes".....found incredible info on the science of cookies.....asked friends opinions on Facebook and got lots of suggestions.....we found and made many good recipes, but none that blew us away . . . . . . .UNTIL this one!!

I just happened to come across a blog that had a recipe that said it was the best and sounded very convincing! I tried it and oh. my. lanta......yum!!

Soft and chewy on the inside, crispy on the outside, they don't flatten out too much, just the right amount of chocolate, and they're easy.......they immediately went to the top of the pile and the hubzy was really impressed! I stopped my search and have made these ever since!

The blog I found it on is no longer public, so I can't direct you to it, but I knew I had to share the recipe.....

THE BEST CHOCOLATE CHIP COOKIES.....EVER
1 c. butter, softened
3/4 c. brown sugar
3/4 c. white sugar
2 eggs
1 tsp. vanilla
1 box (5.1oz) vanilla instant pudding
1 tsp. baking soda
1 tsp. salt
2 cups semi-sweet chocolate chips
2 1/2 c. flour

1. Cream together the butter and sugars.

2. Add the eggs and vanilla and mix well.

3. In a separate bowl, mix the pudding, baking soda and salt together. Add to wet ingredients.

4. Stir in the chocolate chips. Add flour bit by bit until texture is right (you should be able to roll dough into a ball in your hands.....add flour if too sticky). Mix well.

5. Preheat oven to 350. Bake on ungreased cookie sheet until edges are just browning, about 12-14 minutes.

A couple notes:

I usually put in the flour first and then the chocolate chips and they turn out fine either way.
I use a scoop from Pampered Chef to make them all - it goes fast and they're the same size so they cook evenly
We like the semi-sweet chips the best, but you could obviously swap them out for dark, milk, butterscotch....etc.
Not that you would eat raw cookie dough, but it's delicious!! ;)

We've also made the recipe with different flavored puddings -- it's a super easy way to change it up! I was out of vanilla pudding and substituted Pumpkin Pie Spice flavor instead.....delish. I want to try it next with chocolate pudding and have a "Double Chocolate Cookie".

Christmas Party -- Fun Easy Ideas for Food and Decorations!

I just love Christmas time. I love the music, the smells, the foods, the lights of candles and Christmas trees, and the "excuse" to have a great time with friends and family. Hubzy and I hosted a Christmas party this past weekend, and it was a really nice time!

We had a White Elephant gift exchange which was hilarious! I found a zippered coconut at a yard sale a few years ago and thought it was a perfect White Elephant gift! I held onto it just waiting for the occasion.......but since we didn't have a White Elephant party to go to, we planned our own. ;)

First, we cleaned and decorated the house.....we reworked the dining room centerpiece and made it all "Christmas-y". We tried lots of different combinations of candles, glass pieces and ornaments, and the hubzy finally came up with this......I love it!

We reused some of the blue glass that was in the original rustic fall-ish table centerpiece, in our nativity set arrangement. My sister gave me this Willow Tree set as a gift a few years ago and it's one of my very favorite things to put up when we're getting the Christmas decorations out.

I also gave our sad, sad front door wreath a makeover. Years ago I had wrapped some wired burgundy ribbon around it that was leftover from our wedding......and it stayed that way for 12 years! I wish I had taken a picture to show you how sad it was, but it was embarrassing. I thought I'd try to put some new life into it.

I wrapped some new gold ribbon (from clearance after Christmas a few years ago) around it, tucked some ornaments in it (tying them on with some skinny black ribbon so it wouldn't be seen), then tied up a bow to finish it off. I'm certainly no wreath or bow expert, but in about 30 minutes it looked soo much better!
(now that I'm looking at the picture though, I'm going to have to rotate some of the ornaments to better balance the colors....I did this just a couple hours before the party)

We tweaked the living room a little......normally there are "squooshed" marbles around the votive holders in these candle holders, but we added some green by replacing them with split peas (like I saw here).

We also have a cool old wooden box sitting on a credenza that we decided to fill with ornaments.....like a box of Christmas treasure. ;)

In our living room hangs a great picture of palm trees that we found clearanced at Bed Bath and Beyond a few years ago, but it just seems weird to us to have palm trees on the wall, in the Winter.....in Michigan.....but the wall looks naked without a picture, so we wrapped it in wrapping paper and ribbon, and I made another bow. It adds some fun color to the lonely side of the room that's opposite the tree.
(sorry it was hard to get a good picture...but you get the idea)

There were going to be kids and adults at the party, so our menu was kid-friendly. Friends brought snacks to share, like cheese and crackers, and those yummy pretzel/hershey kiss/M&M treats.

Of course I used Pinterest as a resource to find some yummy treats.....and like usual, it did not disappoint. ;)
We had these tortilla roll-ups, that I attempted to stack into a Christmas tree, but they didn't quite turn out like this picture.

My sister assembled a "mini-sausage wreath" (little smokies wrapped in strips of crescent roll dough, baked into a ring like a wreath), and I was going to make these pretty winter cupcakes, but ran out of time. I also thought about making a red and green layered Christmas cake (like the easy Rainbow layered cake I made this Summer), but changed my mind so that we could stick with finger foods.

I did however make these Reindeer Cupcakes that were a big hit. I had a great little team of helpers that helped attach the eyes, noses, antlers, etc. I think they turned out so cute and they were yummy too!

I don't really have a tutorial for the cupcakes since they were so easy, but here's what I did:

make a boxed cake mix according to package directions
spread chocolate frosting on top of cuppycakes (I used a tub from Aldi's)
place a Nilla wafer for the nose/mouth area
add tiny twist pretzels for the antlers
use coconut M&M's as eyes ("gluing" them on with a dab of frosting)
"glue" an M&M nose on
add a dot of frosting on the eyes (using a frosting bag with a writing tip would've been neater, but I was in a hurry since guests were already arriving -- an edible food marker would work great too!)

As everyone arrived, we talked and gathered around the food, then we had the kids do their White Elephant exchange. There were 14 of them, ages 4-11....and it was pretty funny to see their reactions as they tried to figure out this weird way to give gifts, lol.

When they were done, the adults did our gift exchange.....good times! It's always fun to see what everyone brings to a White Elephant party. We also played CatchPhrase which is one of my favorite games....it's just one of those games that's perfect for adults or kids, whether you have a few minutes or a long time to play!

We had lots of laughs and fun with friends, but didn't have to spend a lot. It was a pretty cheap party! I hope that maybe I've given you some frugal ideas for recipes or decorating for your holiday soiree! =)

Christmas Activities Advent Calendar Idea!

I've always wanted to do some sort of advent calendar with the kids to count down the days until Christmas, but I never liked the idea of them expecting candy everyday, and as we had more children I had a hard time thinking up something that included them all.....I mean, how many advent calendars even include 5 chocolates a day? ;)

I found this idea for an advent calendar back in October on Pinterest and have been excited about it since! It's an "experience" advent calendar, so that the month of December is filled with things to do together.....reading books, baking cookies, sledding.....normal "Christmasy" and Winter things. I love that it will keep things all spaced out through the month, but also make sure we do those important family things that can get forgotten about in the busy holiday season.

Kim at All Things Simple includes a list of their activities. I also saw in the comments, someone suggested....calling a grandparent in another state and sing a Christmas carol -- love that! I'm sure we'll use a day to make teacher gifts, and another to watch Elf (such a good movie)!

I don't have an advent calendar, so I just planned on putting the little cards into a pretty jar, and maybe even including it as part of our table centerpiece. We'll just pick one each day and I think the kids are going to love counting down to Christmas this way! I know I am. =)
