DIY Ice Cream Sundae Kit - Great Group Gift Idea!


Group gifts can be a tough thing to find -- you want everyone to like it, and when it's a family with adults and kiddos with all different tastes and preferences....good luck!  Thankfully almost everyone likes ice cream!  I thought this would be yummy, but it could also create a fun family night too.

Put together this ice cream sundae kit and all they need to add is ice cream!  *Very important that you do not add ice cream to the kit, or you'll have a ridiculous mess*  ;)

I was going to add some cute ice cream bowls (like these or these), ice cream scoop, etc., but I knew the two families these were going to already had those things, so we just stuck with toppings.



You could get any fun thing that's on sale or looks delish, but here's what we included:
  • 3 Smuckers toppings (mixed berry, hot fudge, and caramel)
  • Kraft Mallow Bits
  • nut topping
  • bananas (only because we were giving the kit in person the next day - make sure it's not going to sit under a tree, lol!)
  • sprinkles
  • waffle bowls
  • Oreos
  • jumbo maraschino cherries
  • pineapple tidbits

The grand total was $22 (not bad for a family of 5 and a family of 6!) -- but it was a last-minute idea, so not much was on sale...it could've been cheaper!

I had leftover white boxes from a department store (Kohl's or JCPenney?) that gives you boxes when you buy something around Christmastime.  It was nice and big...and free (but the bottom was not very strong, so if you go with something like that, I would reinforce it and keep the kit more secure). 

I just laid a few layers of tissue paper in the boxes, arranged the yumminess until I liked the way it looked, then threw in a few pieces of curly green ribbon (I loove curly ribbon!) to dress it up a little.

Strawberry "Lazy Cake Cookies" recipe - and 5-year old birthday fun!



I was looking on Pinterest for an easy and yummy recipe to whip up for my daughter's birthday last week, and discovered this fun website, I'm a Lazy Mom, where she shares all kinds of "lazy" tips and tricks - and she's funny too!  She says "lazy", I say "simplify"!  ;)


Emma's birthday was on Thursday, and I was leaving that evening for 4 days, so it had to be easy because I had so many things left to do (like pack!), but I wanted it to be special too!  This Lazy Cake Cookie recipe worked perfectly!


Here's the original recipe:

  • 1 box yellow or white cake mix
  • 2 eggs beaten
  • 5 T melted butter
  • 2 C M&M's or mini chocolate chips
Mix together, put in a 9x13 pan and bake at 350 for 20 min!

Once I put it in the 9x13 pan it didn't look like enough batter, so I almost switched to an 8x8 pan, but it was just fine.  It really helped to wet my hands before spreading it out, so it didn't stick to my hands at all.

Lucas was so happy to be part of the birthday fun!

It was just that simple!  It's so easy to change up however you like too!  My daughter wanted to use a strawberry cake mix with chocolate chips - it turned out yummy!




I'm excited about trying the other combination possibilities too - I'm thinking about a chocolate cake mix with Reese's pieces/peanut butter cups, spice cake mix with cinnamon chips....mmm! 
(They're similar to brownies in that if you want them to be a little "fudgy" make sure not to overcook them! I would cook ours a little less next time, but they were still great just like they were!)

Here's the birthday girl in her "My Little Pony" dress-up outfit and accessories I found clearanced at Target. They were originally priced at $34, but I found it for only $10!  Score!  ;)


While she was sleeping the night before her birthday, I taped pink and purple streamers to her doorway, so she'd start the day with fun when she woke up.  We had fans blowing to cool the house, so they danced around too.  =)  (I couldn't get a better picture since I was trying to be sneaky and not turn any more lights on, lol)

Easy DIY Rainbow Layered Cake Tutorial!


When my family came to visit this weekend, I wanted to make a fun dessert that everyone would love. I've seen a layered rainbow cake all over blogs and Pinterest that's so bright and colorful and have been wanting to make one anyway - the "family reunion" would include 16 kids, so I thought it would be a perfect choice.

I was a little nervous at first to try this cake -- it looks so impressive that I thought it might be tough, or I'd mess it up. If you're worried about that too - don't be! It could hardly have been easier! There are a couple more steps than a "normal" cake, but it's so simple!

I started with a white cake mix (Duncan Hines maybe? You could use any white cake mix - boxed or from scratch) and mixed it up according to the directions on the box. Then I separated the batter into 6 cups.


Using Gel Food Dye, I dyed them each a color of the rainbow - purple, blue, green, yellow, orange, and red. (The colors of the batter were pretty true to the color it was when it was baked.)


My husband helped me cut out 6 circles of wax paper to help the cake not stick to the bottom of the pan.....well, he cut out circles, I'm not sure what shape mine was. We set the pan on the wax paper, traced around it with a colored pencil and cut out the circle.

We placed the wax paper in the bottom of the pan, sprayed it with Pam and poured one color in.  It was pretty thick so we had to spread it out a bit.  Then we baked it for 15 minutes at the temperature on the box -- 350 I believe.


When the first two came out, it wasn't pretty, lol!  I don't know if my batter was extra thick or what, but it didn't spread on it's own like I'm used to cake batter doing.  I spread it a little better in the next pans.


With only 2 circle pans, I had to do 3 batches to cook all 6 colors.  As each round came out of the oven, I let them cool off for about 10-15 minutes.  Then I set them on a cooling rack, put the rack into the fridge to really cool off and put the next two pans in the oven.


I stacked them with the wax paper still "attached" so they wouldn't stick together.  When they were all cool, I wrapped the stack in saran wrap and left them in the fridge overnight.  They looked like a stack of big pancakes made by Rainbow Bright.  ;)


The next day when I was ready to assemble them, I got out Cool Whip for between the layers and Whipped Cream Cheese frosting for the outside.  I considered making my own frosting and filling, but had no time for those kinds of shenanigans with all we had going on...maybe next time.

To start, I layered 3 pieces of wax paper on the cake plate to keep it clean.  Then I put a dollop/smear/smidge of frosting on the center of the cake plate the keep it from slipping around. I started with the purple layer on the bottom and spread Cool Whip on it.  Then I turned the blue upside down onto the purple layer and peeled the wax paper off, and spread Cool Whip on that layer......and so on in rainbow-tastic order.

When they were all stacked and Cool Whipped, I spread a thin layer ("crumb coat") of the frosting over the whole thing and put it in the fridge for about 30 minutes. 



Then I spread the rest of the frosting over the cake, pulled the wax paper out and viola!


I liked it simple on the outside because of how fantastic of a surprise it would be when you cut into it, but it looked a little plain.  And I like there to be a hint of what's inside too, so I decided to put some sprinkles on top.




Then when we cut into it.............









Beautiful!  I was really happy with how it turned out and everyone loved it!

Because I used Cool Whip, the layers did tend to slip off each other a little bit once it was cut into slices, but everyone gobbled it up so quick I don't know that it mattered much.  I do think it kept the layers nice and moist though -- next time I might use frosting in between - or frosting for some, Cool Whip for some.

I would make some tweaks to improve it (like maybe use 2 cake mixes and 2 -3 cans of frosting - or make my own), but for the first try I'm very happy with it overall.  =)  I'm thinking about maybe doing a Pink Lemonade party, like this one, for my Emma's 4th birthday next month (I'm in denial.....but still planning a party), and maybe alternating pink and yellow layers!
